Ingredients:

  • 2 medium zucchini
  • 50 g breadcrumbs
  • 30 g grated Parmesan
  • 1 egg (size M)
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp paprika powder (sweet)
  • 1 tsp dried oregano
  • 1 tbsp olive oil (for greasing baskets)

Instructions:

  1. Prepare zucchini: Wash and cut zucchini into 1 cm thick sticks.
  2. Prepare coating: Beat the egg in a bowl. In a separate bowl, mix breadcrumbs, Parmesan, salt, pepper, paprika, and oregano.
  3. Coat zucchini: Dip zucchini sticks in egg and coat them with the breadcrumb mixture.
  4. Prepare baskets: Lightly grease the air fryer baskets and arrange the zucchini sticks evenly.
  5. Cook: Set the air fryer to 200°C and cook for 10 minutes. Shake halfway through for even crispness.
  6. Serve: Serve the crispy zucchini sticks with a yogurt dip or light herb sauce.
